Fargo’s Pit BBQ

You may think I’m trying to turn my weekly blog into a restaurant review, but there’s one more place I want to tell you about really quickly. I promise next week you’ll see a little “patch” of something new (teaser hint for next time)! This week, however, I just have to tell you about an award winning BBQ place in Bryan: Fargo’s Pit BBQ.

In Texas we love our BBQ. I don’t mean we just like it – we LOVE it! In most Texas towns, large and small, there’s a BBQ place. It may be a food trailer, a little one room shack, or a large restaurant with a line out the door. When we get together at church functions, holidays and pic-nics you can bet there’s a good chance that BBQ is involved. All that to say, we have lots of chances to try different types and styles of BBQ and we probably feel pretty strongly about what we think is the best. We can spend an hour discussing whether it’s better with or without sauce. Am I right?

Well, Texas Monthly magazine agrees and in 2013 they chose what they believe are the “50 Best BBQ Joints in the World.” And guess what – Fargo’s Pit BBQ is on that list! Yep, right here in Aggieland. Now we have some really excellent BBQ places here and I’ll probably talk about some of the other places down the road. But right now I want to tell you more about Fargo’s.

Located in the heart of Bryan on Texas Avenue toward downtown (but before you get to “the bend”) Fargo’s has a nice, large dining room capable of handling you and your group. Maybe you remember the old Barnhill’s Buffet or Western Sizzler before that. Fargo’s moved into that building in 2017 after their old downtown Bryan location’s business grew beyond capacity. It wasn’t uncommon for Fargo’s to completely sell out of BBQ during the lunch rush and you had to get there early to have a shot at one of the few tables. With that kind of success you knew they were destined for big things.

While the location may have changed, their recipe for success didn’t. Their meats are hand rubbed to get the seasoning just right. Then they are slow smoked in an oak-fired pit to get that amazing, uniquely Texas BBQ taste. As you’d expect, you can choose from brisket, sausage, chicken and pork ribs. Tack on some red beans, potato salad, mac & cheese or mixed greens and then follow that up with a little peach cobbler and you’ve had the Fargo’s experience. Every day they have a different lunch special that includes pork chops, beef ribs or rib tips. Never had a rib tip? Go by “early) and ask Alan about those. He’s the proud owner and pitmaster . . . and a wizard with BBQ!
It doesn’t matter if you’re from Aggieland, just visiting or thinking about a move. You need to give Fargo’s Pit BBQ a try the next chance you get.
